the chata patch

Chatas are a shorter version of plantains. We grow our own chatas right on resort property for use in the kitchen.

husking coconuts for organic coconut oil

This morning I spotted Gerson, a member of Team Paya, husking coconuts that will be used to make organic coconut oil for use in the resort's restaurant. Learn more about the traditional method of making coconut oil.

garden update

All the energy we've put into the herb and vegetable garden lately is starting to pay off. We hope to soon harvest some locally-grown produce!

herb and vegetable garden 2.0

We are currently putting lots of energy into the resort's herb and vegetable garden using a novel approach. We're taking old, discarded tires (notorious breeding grounds for mosquitos), flipping them inside out, and turning them into large planters in which we'll grow herbs and any vegetables that can prosper in our tropical climate. The planters are elevated off the ground so the land crabs can't get into them.

fruits of her labor

This morning, Lisa brought samples of the fruits, veggies, and herbs she's growing organically in Paya's garden. In the photo above one can appreciate basil, cherry tomatoes, a sweet pepper, chili peppers, and chives. One goal of our Green and Organic effort is to supply our restaurant with as much locally grown, organic produce and herbs as we possibly can. A labor of love for our good health and our planet.
