In the summer, during mango season, Ms. Winnie cooks down large batches of homemade mango jam for use at the resort's restaurant during the upcoming year. The slow-cooking technique she learned from her mother is so perfect that there is no need to add any preservatives to the delicious tropical fruit jam.

I love it when our visitors from the Great North come bearing gifts! Julie and Jacob, repeat clients from Canada, brought me some yummy 100% Pure Maple Syrup. Thank you so much, guys! I'm convinced maple syrup plays a part in the reason why North Americans are often such kind, awesome, generous people!

The exquisite decadence of homemade caramel-drenched cinnamon rolls always makes the anxiety of going through a tropical storm much easier to bear. Winzina (one of Paya's cooks) made these delicious treats for us this weekend. YUM!
