making hot sauce

At Paya Bay we make our own signature hot sauce using mutton peppers. In these photos, Ms. Winnie blends the flavorful yellow Caribbean peppers into a delicious, ultra-spicy sauce.

husking coconuts for organic coconut oil

This morning I spotted Gerson, a member of Team Paya, husking coconuts that will be used to make organic coconut oil for use in the resort's restaurant. Learn more about the traditional method of making coconut oil.

ricas micheladas!

Paya Bay's restaurant and the Black Iguana beach bar are currently serving some exquisite ice-cold Micheladas! Make sure and try these spicy, deliciously-tangy Mexican concoctions on your next visit to Paya! You combine the tomato juice, lime juice, and spices "broth" with your favorite beer in a salted, frozen beer mug. My personal favorite beer for Micheladas is Corona, but they can be made with your favorite local Honduran brew, and those are also smashing!

golden yummy goodness

In the summer, during mango season, Ms. Winnie cooks down large batches of homemade mango jam for use at the resort's restaurant during the upcoming year. The slow-cooking technique she learned from her mother is so perfect that there is no need to add any preservatives to the delicious tropical fruit jam.

feel good food magic

The planets have aligned for a project that has been on my Master To Do list for some time now. European vegetarian chef OndÅ™ej "Andru" Å teg is currently introducing our new Feel Good Menu: food that makes you feel good. Chef Å teg will be training our staff in preparing the new food offerings and will implement the new menu over the next several weeks. Special thanks and recognition to Tatiana Rozsypalova for her critical collaboration in getting this project launched. There is food magic happening in the kitchen at Paya! chef escalante

My friend José Luís Escalante is visiting Paya Bay this weekend with his partner. José Luís is a chef based in Tegucigalpa, the capital of Honduras. His excellence has resulted in him traveling extensively around the world showcasing Mesoamerican cuisine at international events. Originally from Guatemala City, he fell in love with Honduras and made it his home. He recently signed on to a project to help us transform our food service here at Paya. The first item on the agenda is the Feel Good menu -- a fresh new approach focused on healthier options, sourcing locally and sustainably, and offering our guests a genuine taste of Mesoamerica. Even though José Luís identifies simply as Guatemalan, his Middle-Eastern heritage is obvious, underscoring what a cultural and ethnic melting pot the Americas are. He agreed to let me take these photos focusing on his classic, beautiful, Middle-Eastern facial structure.
