At Paya Bay we make our own signature hot sauce using mutton peppers. In these photos, Ms. Winnie blends the flavorful yellow Caribbean peppers into a delicious, ultra-spicy sauce.

happy independence day, Ms. Winnie!
Winnie Gale, our most excellent head cook, recently bought herself a motorbike to get back and forth to work, as well as have her own "trans" to get around the island. It makes me so happy to see Paya's team members acquire key conveniences that make their lives easier, more enjoyable, and more fun. Your support of the Paya Bay project touches the lives of many people. Thank you for believing in us. Ever upward, ever outward, Ms. Winnie!

meet the paya staff: Winnie
Ms. Winnie is Paya Bay's chef. We think her "secret ingredient" is the love and care she puts into making delicious food.

"spread the word"

Thursday evening, as Winnie and I were setting up the beach for the Tribal Beach Party, I asked her rhetorically, "Winnie, we're going to make it through this, right?" I was referring to the flood of bad news the past few weeks regarding the world's financial markets and the resulting economic contraction. Winnie didn't miss a beat, immediately replying, "Oh yeah! We're going to make it! Spread the word!" Her optimism and enthusiasm made my heart and my soul smile. Winnie is the head cook for Paya Bay's food service. Photo Credit: Robert Fullerton.
